PELATIHAN PENGOLAHAN MAKANAN YANG AMAN DAN BERKELANJUTAN BAGI PELAKU USAHA KULINER DI DESA WISATA MANDALIKA LOMBOK TENGAH NUSA TENGGARA BARAT

ABSTRAKPangan merupakan salah satu kebutuhan dasar yang pemenuhannya merupakan hak asasi manusia,setiap orang berhak untuk memperoleh pangan yang aman, bermutu, bergizi, dan menyehatkan. Pangan yang dikonsumsi tersebut memiliki peranan yang sangat penting dalam pertumbuhan, pemeliharaan tingkat peningkatan derajad kesehatan dan kecerdasan masyarakat. Memasak adalah seni mengolah bahan baku menjadi hidangan siap makan dengan metode memasak yang tepat. Akademi Kesejahteraan Sosial AKK bersama GBDI melaksanakan pelatihan pengolahan makanan yang aman dan berkelanjutan bagi pelaku usaha kuliner di desa wisata Mandalika Lombok Tengah. Kegiatan ini di danai oleh Gesellschaft fur Internationale Zusammenarbeit (GIZ) GmbH. Dengan Kegiatan Pengabdian kepada Masyarakat ini bertujuan untuk (1) Memberikan pemahaman kepada para peserta atau pelaku usaha kuliner mengenai konsep pangan aman berkelanjutan (pangan bijak). (2) Meningkatkan pemahaman dan berbagi pengalaman bagaimana menerapkan konsep pangan sehat dan bijak di dalam usaha kuliner. (3) Praktik membuat formulasi menu dengan konsep gizi seimbang Piring Makanku. Pre test dilakukan sebelum pelatihan untuk mengetahui tingkat pemahaman peserta terkait pengolahan makanan aman berkelanjutan. Di Akhir pengabdian masyarakat dilakukan post test untuk mengetahui efektifitas pelatihan pengolahan makanan aman berkelanjutan. Kegiatan pelatihan pengolahan makanan aman berkelanjutan bagi pelaku usaha kuliner di Mandalika Lombok Tengah berpengaruh positif di buktikan dengan kemampuan peserta lebih terampil dan mengerti dalam pengolahan makanan aman berkelanjutan dalam berbagai variasi menu.

ABSTRACT
Food is one of the basic needs whose fulfillment is a human right, everyone has the right to obtain food that is safe, quality, nutritious and healthy. The food that is consumed has a very important role in growth, maintaining the level of increasing health and intelligence. Cooking is the art of processing raw materials into ready-to-eat dishes with the right cooking method. Akademi Kesejahteraan Sosial AKK with GBDI conducted training in safe and sustainable food processing for culinary entrepreneurs in the tourist village of Mandalika, Central Lombok. This activity was funded by the Gesellschaft fur Internationale Zusammenarbeit (GIZ) GmbH. This Community Service Activity aims to (1) Provide understanding to participants or culinary entrepreneurs regarding the concept of safe, sustainable food (wise food). (2) Increase understanding and sharing of experiences on how to apply the concept of healthy and wise food in the culinary business. (3) The practice of making menu formulations with the concept of balanced nutrition, My Dinner Plate. The pre-test was carried out before the training to determine the level of understanding of the participants regarding sustainable safe food processing. At the end of the community service, a post test was carried out to determine the effectiveness of training for sustainable safe food processing. .

3. Author Online Use
- Personal Servers. Authors and/or their employers shall have the right to post the accepted version of articles pre-print version of the article, or revised personal version of the final text of the article (to reflect changes made in the peer review and editing process) on their own personal servers or the servers of their institutions or employers without permission from RCEPM-LIPI, provided that the posted version includes a prominently displayed RCEPM-LIPI copyright notice and, when published, a full citation to the original publication, including a link to the article abstract in the journal homepage. Authors shall not post the final, published versions of their papers;
- Classroom or Internal Training Use. An author is expressly permitted to post any portion of the accepted version of his/her own articles on the author’s personal web site or the servers of the author’s institution or company in connection with the author’s teaching, training, or work responsibilities, provided that the appropriate copyright, credit, and reuse notices appear prominently with the posted material. 4. Articles in Press (AiP) service
RCEPM-LIPI may choose to publish an abstract or portions of the paper before we publish it in the journal. Please contact our Production department immediately if you do not want us to make any such prior publication for any reason, including disclosure of a patentable invention.
5. Author/Employer Rights
If you are employed and prepared the article on a subject within the scope of your employment, the copyright in the article belongs to your employer as a work-for-hire. In that case, RCEPM-LIPI assumes that when you sign this Form, you are authorized to do so by your employer and that your employer has consented to the transfer of copyright, to the representation and warranty of publication rights, and to all other terms and conditions of this Form. If such authorization and consent has not been given to you, an authorized representative of your employer should sign this Form as the Author.
6. RCEPM-LIPI Copyright Ownership
